BLUE CHEESE CARAMELIZED ONION GALETTE
One of the many delicious recipes from my college friend, Laura.
Serves about eight for appetizer.
Preheat oven to 350
CRUST
Use the crust from the Apple Galette - this recipe only takes half, but I usually use the other half for a smaller apple galette or you can double the topping to this and make a very large galette.
TOPPING
1TBL each of olive oil and butter
2 medium sweet onions -- Walla Walla or Vidalia
2 tsp of sugar
2 TBL of balsamic vinegar
3/4 cup of crumbled blue cheese
2 tsp of fresh, chopped rosemary
1/4 tsp of ground black pepper
Heat oil and butter in large skillet over medium heat. Add onion and sugar; cook over medium heat for about 25 minutes until onions are caramelized - stirring very frequently. When onions are a warm golden color, add balsamic vinegar and stir until it evaporates...about 2 minutes. Set aside to cool.
Take pastry from refrigerator. Cut a 12" square piece of parchment paper. Roll dough out on paper flouring as necessary. Roll into square shape, crimp up edges all around, about 1/2 inch.
Spread the blue cheese out, spread the onions over the blue cheese, sprinkle the rosemary last and pepper. Bake until crust is deep golden brown, about 25 minutes. Cut into squares.
Can also be made round and cut into wedges.
